Yeah, you read that right. But I’m not talking about cracking eggs in a pan with tomatoes and mozzarella. I’m talking about the way I did it this past weekend–with bits of leftover pizza folded into an omelet. Something about it is very primitive, very college, very hangover. But mostly, it was delicious. Just ask my wife. It started with some leftover pizza we had in the fridge. I used homemade pizza, like the one I posted here last month. But you can use any pizza you have left over from the night before. Take out 2-3 large eggs. Heat the pizza (1 large or two small slices) for 30 seconds in the microwave or 5 minutes in the toaster oven at 350 degrees, just to warm it a bit. Cut the crusts off, then cut the pizza into bite size cubes. Heat a medium skillet over medium heat, and coat with cooking spray. Crack the eggs into a bowl with a splash of milk or water, and a sprinkle of salt and pepper. Pour the eggs into the pan, and swish the pan a bit to let the eggs cook and set evenly. When the egg is almost set, sprinkle with the pizza bits. When the egg is almost entirely set, fold over half and cook for 30 seconds. Flip the omelet and cook for another 30 seconds. Slide onto a plate and cut in half. Serves two hungry and/or hung over people. Bonus–try it with a Bloody Mary, like the one I posted here. I’m thinking of doing fried chicken week at Mikey’s Kitchen sometime soon. I also still want to do bacon week. But before any of that, I wanted to talk about how perfect this meal of fried chicken, fries, cole slaw and a roll was at Hubbard Avenue Diner here in Middleton (a suburb of Madison). Fried chicken sounds easy, but while I’ve never actually tried to make it (that will change soon too), I almost have to order it when I see it on a menu. And I did just that recently for lunch on a Saturday at Hubbard–and they have it on special Thursday and Saturday. This chicken was so perfectly crispy and moist, the fries were also perfectly crispy on the outside and soft inside, and the cole slaw was creamy and more importantly, had no onions in it. The roll was kind of eh, but I can let that slide. If you live in Madison, chances are you have eaten at Hubbard Ave. Diner (note: they have not offered me a free meal or anything to post this–it’s truly on my own), and it’s almost always exceptional. They have great burgers, sandwiches and mac & cheese as well as killer breakfast items. Two other favorite items of mine there are pie (many different kinds, which they are known for) and quite possibly the best bloody mary I have ever tasted. But now that my mouth is watering after seeing that pic of fried chicken again, I realize that today is Thursday and Hubbard Ave. Diner is 15-20 minutes away. See ya! All-natural hangover cures Posted by Mike Farley (12/27/2010 @ 5:52 pm) Hung over after too many cocktails over the Christmas weekend? Maybe not, but chances are better you will be after New Year’s Eve this coming weekend. And if you are, you may or may not have your go-to remedies such as Tums or Alka-Seltzer (my personal favorite). Or you may opt to cure it with food or, for you hardcore drinkers, more alcohol. A great food cure is huevos rancheros, or a couple of the other recipes we posted recently on Bullz-Eye’s Grub for Guys–“hangover” soup and bloody marys. Here are those recipes….but either way, be safe during this holiday season and always by not getting behind the wheel if you’ve had a few too many:
Hangover Soup and Bloody Mary Okay guys. The following recipes are for those days when you wake up after a night of imbibing, and have cottonmouth, a pounding headache, sore muscles, and a thick fog hovering atop your very existence. That, and you surely don’t want to put anything into your body right now. Well, you sort of need to, because you need to replenish with fluids and protein, give yourself a jolt with hot sauce, and if using vodka, getting the dog that bit you last night. And believe me, I know firsthand that these both work, as well as drinking plenty of water. Hangover Soup Ingredients: 1 carton (or 2-3 cans) chicken broth ½ cup small pasta such as orzo 1 egg, beaten ¼ cup Parmesan cheese Black pepper to taste Directions: Bring chicken broth to a boil in a medium saucepan. Add pasta and cook according to directions, 6-8 minutes. Remove from heat, and slowly add egg as you stir the soup. Add Parmesan and pepper, and serve. Makes about 4 1-cup servings Bloody Mary (or Virgin Mary if you omit vodka) Ingredients: 2 cups tomato or vegetable juice (such as V-8) 1 shot vodka (optional) 1 tsp. Worcestershire sauce 1 Tbsp. hot sauce (more if you like it hot) Juice of ½ lime 1 Tbsp. prepared horseradish ¼ tsp. celery salt Salt and pepper to taste 1 stalk celery Directions: Combine all ingredients except celery in a tall glass. Stir, add ice and serve with celery stick. Serves 1, but if it does the trick, you may want to have another…I’m just sayin’!
