With an assist from food TV–including a new show on Travel Channel called Feed the Beast, which I’ll be previewing before it premieres on Wednesday; and then an hour of Food Network’s Diners, Drive Ins & Dives yesterday, and after my wife (i.e. Jenny) and I both had this sluggish, head-achy thing going on, we decided we needed to eat something fatty and greasy. We were not hung over, but that’s what it felt like, and we needed a Sunday morning hangover remedy on Sunday evening. Those shows made me crave eggs and fat and salt, and when I saw we had chorizo in the fridge, I knew what had to be done–we had to make Mexican breakfast for dinner. Jenny agreed and put that on her chalkboard. So what you’re seeing in the photo and that went happily into our bellies last night is this…..first, I took a leftover baked potato and cut that up, and stir fried it in a bit of canola oil. Meanwhile, as the potato was cooking, I took a link of chorizo (by link I mean it was maybe a foot long), removed the meat from the “fake” casing, and fried that up in a pan for about 10 minutes until it was cooked through and crispy, draining on paper towels. I wiped out the pan, and fried four eggs in it. Jenny shredded some cheddar cheese (full fat kickass Wisconsin cheddar), and I cubed an avocado while the eggs were cooking. I also opened up a can of refried black beans, and chopped some cilantro. As the eggs were set, it was time to assemble this creation in a big bowl– First, the potatoes, which were nice and crispy. Then a dollop of refried beans and the chorizo. We topped that with two eggs in each bowl, followed by the avocado chunks, cheese and cilantro. Oh, and some Mexican hot sauce for good measure. Suffice to say we both felt so much better after eating this dinner. It was one of those food nirvana moments when you feed your body what it’s craving, and then some. And hey, now I know what to make next time we are hung over….and we hope you try it too. More pizza and eggs Posted by Mike Farley (06/27/2012 @ 6:17 pm) I recently whipped up a kickass omelet using cut up pizza as the filling. It’s a combination that I’m not sure why it’s not done more. So when I was in upstate New York last week visiting family, and had the most awesome pizza from Bud’s Place, I commented that this pizza was so good, I might have to have it for breakfast with my eggs in the morning. And I wasn’t joking.
So the next day, I heated up a slice of pizza (my sister showed me that the best way to re-heat pizza is in a frying pan, and she was right). Then I fried an egg, sunny side up, and slipped that right onto the pie. Pure heaven. Seriously, I wasn’t hung over but if you can think of a better hangover food combination, tell me what it is. Man, I’m hungry now. I wish I had some pizza on hand! Product review: Hormel Mary Kitchen 50% less fat Corned Beef Hash Posted by Mike Farley (02/28/2012 @ 10:11 pm) Just in time for St. Patrick’s Day, right? I popped open a can of Hormel Mary Kitchen 50% less fat Corned Beef Hash for lunch today, and it was awesome. What I did was to empty half a can into a skillet sprayed with cooking spray, and cooked on medium heat for about ten minutes with flipping it. That made the bottom nice and crispy, and then I flipped it over to crisp the other side. After about five more minutes, I cracked an egg on top and let that cook until set, added salt and pepper, and instant lunch! Of course, this is a food more suited for breakfast, but there are no rules here at Mikey’s Kitchen.
I didn’t compare this against the full fat version of this hash, but this one had less fat (I believe 7 grams per serving). However, it was still 290 calories, so if you’re watching your weight, you should keep this one on the shelf. Anyway, the tasty combo of tiny cubes of corned beef and potatoes was filling and delicious, and even better crisped up with the egg on top. This is a good thing to keep on hand for hangover food or to impress your house guests. Yeah, you read that right. But I’m not talking about cracking eggs in a pan with tomatoes and mozzarella. I’m talking about the way I did it this past weekend–with bits of leftover pizza folded into an omelet. Something about it is very primitive, very college, very hangover. But mostly, it was delicious. Just ask my wife. It started with some leftover pizza we had in the fridge. I used homemade pizza, like the one I posted here last month. But you can use any pizza you have left over from the night before. Take out 2-3 large eggs. Heat the pizza (1 large or two small slices) for 30 seconds in the microwave or 5 minutes in the toaster oven at 350 degrees, just to warm it a bit. Cut the crusts off, then cut the pizza into bite size cubes. Heat a medium skillet over medium heat, and coat with cooking spray. Crack the eggs into a bowl with a splash of milk or water, and a sprinkle of salt and pepper. Pour the eggs into the pan, and swish the pan a bit to let the eggs cook and set evenly. When the egg is almost set, sprinkle with the pizza bits. When the egg is almost entirely set, fold over half and cook for 30 seconds. Flip the omelet and cook for another 30 seconds. Slide onto a plate and cut in half. Serves two hungry and/or hung over people. Bonus–try it with a Bloody Mary, like the one I posted here. Don’t tell your cardiologist about this one. Also, don’t tell my doctor, either. But I whipped this up this past weekend and it was too delicious not to share with you. And it’s real easy. It also was the perfect breakfast after I had a few beers Friday night. First, take a generous handful of Frito’s and put then in a shallow bowl. Cook 2 slices of bacon in the microwave (or as you would normally cook bacon) for about 2 minutes or until crisp. Cut 3-4 slabs of Velveeta off a hunk and cut that into smaller cubes. Sprinkle over the Fritos and nuke for about 30 seconds. Crumble bacon on top of Frito mixture. Meanwhile, spray a nonstick skillet with cooking spray and warm over medium heat. Crack an egg (or two) into the pan and cook for 1-2 minutes or until the whites are set and yolk is still runny. Slide egg(s) onto the top of the Frito mixture and sprinkle with hot sauce. Serve with a big glass of OJ or big mug of coffee, and enjoy (trust me, you will!).
