Jenny’s chalkboard

Every once in a while, my wife and I decide it’s time to take inventory of what food we have in our house, because it tends to start overflowing in the refrigerator(s) and pantry(ies). And by -ies I mean in bags on a shelf in the basement. So I went and took inventory and one thing we had overstock in was frozen chicken breast. I asked my wife what we should make — let’s call my wife Jenny, because, well, that’s her name. She said, “How about we pound the chicken flat, stuff with spinach and sun-dried tomatoes and roll them up? I thought for half a second and said, “Brilliant!”

I’ve been the main cook in our house, but Jenny has been cooking 1-2 times per week lately. Still, this recipe was all on me to execute, while she made the sides. Jenny wrote on a little chalkboard, “Tonight: Chicken with spinach and sun-dried tomatoes with a nice array of vegetables.” She was in charge of the vegetables–roasted asparagus and red and yellow bell peppers. I set out to make the main event.

So I cut the chicken breasts into 3-4 oz. pieces and then pounded them flat in a large zip-lock bag. I sauteed some spinach in olive oil and added salt, pepper, garlic powder and onion powder, and when cool enough added about 1/4 cup of slivered sun dried tomatoes (from a jar packed in oil). Then I placed a small mound of spinach mixture on each chicken breast piece, and rolled them up, securing with a toothpick. Obviously you cannot pan fry them with toothpicks sticking out, so I only used the toothpicks to hold the chicken momentarily together. And it worked!

I heated some olive oil in a large non-stick skillet, and cooked the chicken rolls on each side over medium heat (maybe 8 minutes total) until browned and cooked through. Then I attempted to put the dish over the top. I melted a pat of butter in the pan, added a teaspoon or so of olive oil, then added a little white wine, scraping up the brown bits in the pan. Then I added a little chicken broth and some salt and pepper. As the sauce reduced down, I then added some water and let it reduce more, and then added some lemon juice and parsley, pouring the sauce over the chicken rolls on the plate. Jenny added the “nice array of vegetables” and a new dish was born in Mikey’s (and Jenny’s) Kitchen.

  

Cool Hummus Pizza

So it’s freaking hot. I mean, we live in the great white north, and last Thursday it was 107. In fact, we had 4-5 days of 100-plus heat and it’s been consistently in the upper 80s and into the 90s as well for the last month or more. It sucks too that there has been no rain, but that is another story. Anyway, it is times like this that it’s good to break out hot weather cool foods such as green salad with a protein, pasta salad, or cold soup such as gazpacho. But eventually you run out of options and get tired of these things, especially when there is no relief in sight for the heat.

Last night I busted out a creation I had in my head–the cool hummus pizza. And it was as good as the idea itself, if I don’t mind patting myself on the back a bit.

Here is what to do. Buy a ready-made ball of pizza dough, or if you can’t find any, pick up one of those tubes of dough you might find near the cinnamon rolls. Roll it out into a round (or square, whatever you prefer), brush with a little olive oil, and bake at 450 degrees for 10-12 minutes or until slightly brown (it might bubble up a bit, that is fine). Let it cool for about 15 minutes.

Then spread the crust with about 3-4 a tub of hummus. Top with sliced cucumber, chopped tomato, chopped kalamata olives, feta cheese and parsley…and if you like, some pickled hot pepper rings. Slice and serve.

  

Spring Ahead Sandwich

I’m not sure what prompted me to call this sandwich “Spring Ahead Sandwich,” but I think it has something to do with the fact that it has a hard boiled egg on it–something that may often be associated with Easter or Passover. Anyway, I intended to make this a vegetarian sandwich, until I fed my son some slices of delicious-looking salami for lunch.

So that was that. I picked up some nice long sub rolls, and sliced one open. I piled it with lettuce, salami, sliced hard boiled egg (Trader Joe’s sells them pre-peeled in a bag), sliced kalamata olives, sliced sweet/hot peppers (again, thank you Trader Joe’s for this amazing new treat!). I sprinkled some olive oil, red wine vinegar, salt, pepper and dried oregano, and closed it up. And it tasted as good as it looked in this photo. Okay, so maybe I’m not the best food photog, but it still looks good for a Blackberry shot!

Anyway, give this one a shot or some variation of it. It was filling, but I did have to stop myself short of eating two of them. At least on that day I did.
